"Do everything you can to make your guest happy." Brian Matzkow has closely followed this principle of hospitality, ascending from a 13 year-old restaurant dishwasher in upstate New York to the creator/owner of Sapa, his modern French-Vietnamese eatery.
Matzkow spent his childhood in Melville, Long Island, developing a life-long passion for fishing and a love of the outdoors. Throughout his teens he moved around frequently, always working in restaurants where he found a common rapport with the other guys in the kitchen.
At 18, he moved to Telluride, Colorado. Matzkow thought he'd be a ski instructor who would support himself with yet another restaurant stint, but found out that what he really wanted was to be a chef who would prioritize the kitchen over the slopes. When he left Telluride it was for Hyde Park and the Culinary Institute of America.
Upon graduation, Matzkow worked in the front of house management at the venerable Pierre Hotel before pursuing his interest in spirits as the beverage director for veteran restaurateur, Shelley Fireman. He worked for The Fireman Group for three years, moving among the group's different restaurants and learning first-hand about with is takes to have a serious commitment to hospitality.
Matzkow then combined his hotel and restaurant experience taking a job as the Food and Beverage Director for the SoHo and TriBeCa Grand Hotels. Matzkow applied his hip sensibility and considerable operations know-how to the new restaurant/lounge ventures opening in both hotels. His efforts helped revise the modern perception of the hotel restaurant/lounge from a sleepy spot to a destination for in-the-know locals and tourists alike.
With Sapa, Matzkow has ably stepped into his first position as owner/operator, and his influence is readily sensed in every aspect of the restaurant - from the hiring of cutting edge design firm AvroKO and of accomplished executive chef Patricia Yeo to the service that's efficient and knowledgeable and yet friendly and accessible. Matzkow's innate generosity and fun loving attitude have allowed him to maintain the balance at Sapa where guests experience both utter professionalism and the giddy enjoyment of a great meal.
